Spelt Flour Pancakes

Georgia and I this weekend said what shall we have for breakfast rather than our typical run of the mill breakfast. I have tended recently to get very stuck in my ways when it comes to my foods. So we decided on pancakes as we hadn’t had them for ages but pancakes with a difference.

We decided to go for spelt flour pancakes now those of you who are not aware of what spelt is, it is a whole grain flour which is lower GI than your normal typical wheat grains. The recipe we went for was american pancake style so they are fluffy and smaller here goes the recipe.

120g Spelt Flour
1 Egg
175ml Milk
1 Tsp Baking Powder
3/4 Tsp bicarbonate of soda

Topping: Strawberries, Raspberries and Agave Nectar

Calories: 940 Protein – 39g, Fat – 16g, Carbs – 170g

Method

It is very simple I put it all in a bowl and wisk it all up, it will be a little lumpy but do not worry.

Then I heat a pain spray in some olive oil and pour in the mixture to a hot pan. You should get a circle with a diameter of approx. 10cm.

Leave the pancake cooking until you see holes appear all across the top and then flip it and cook on the other side.

Once cooked put it on a plate slice strawberries onto it and scatter raspberries finally drizzle with some Agave nectar . Yum!
